Before the corn and red pepper yeast waffles, I had some fun with these corn and red pepper fritters. Much simpler to prepare, they are great paired with some asparagus and eggs for breakfast, lunch, or dinner. The asparagus is sautéed with almonds, adding an interesting dimension to the taste, texture, and nutritional value of this dish.
In the photograph, you might notice some red bits on top of the eggs, under the radish sprouts. That is crispy fried chorizo. You can add that or a similar garnish if you want, but it turned out the dish really didn’t need it. It worked very well without that particular land based animal product. Several things that set these patties apart from more typical recipes are: red peppers are roasted first, enhancing their flavour and sweetness; the wonderful smooth caramelised flavour of slow roasted garlic; and the freshness of ricotta cheese.
Corn and red pepper fritters, asparagus and almonds, egg on top
- 2 cobs of corn
- 1 red pepper
- 1/2 cup plain flour
- 1/2 cup self-raising flour
- 2 eggs for the fritters
- 1/2 cup milk
- 2 tablespoons chopped fresh coriander
- 1 small punnet of ricotta cheese
- 1 bulb of garlic
- 1/2 cup of finely chopped coriander
- 1 bunch asparagus
- 1/4 cup of chopped almonds
- 10 gm butter
- a drizzle of olive oil
- 8 eggs broken into bowls of 2 eggs each, with some of the white removed (according to preference and the eggs)

Blanch corn in salted boiling water for 8 minutes. Allow to cool
Roast pepper and garlic for 40 minutes (how to roast garlic)
Cut corn from the cobs
Sift flour and self raising flour
Whisk 2 eggs and the milk
Combine the egg, milk and flour and whisk until smooth. Add salt and pepper and let stand for 15 minutes.
Combine corn, red peppers, coriander, ricotta, roasted garlic with the egg and flour batter.
Fry the eggs, 2 at a time, over a low heat until just done (whites white and yolks still runny)
Heat the chopped almonds in a drizzle of olive oil until just starting to brown
Add butter and chopped asparagus and stir fry until asparagus is cooked but still bright green and crisp
Serve as in picture, or whatever works for you
