Ingredients
Pasta
- 4 cloves garlic
- 3 anchovy fillets omit if vegetarian
- 1 large mild chilli
- 1/2 cup parsley finely chopped
- 2 Tbsp extra virgin olive oil (good quality)
- 2 Tbsp truffle infused olive oil
- 10 g butter
- 300 g dried pasta or 600 g fresh pasta
- 2 tsp salt
Black garlic and balsamic drizzle
- 5 cloves black garlic
- 1 Tbsp balsamic vinegar
- 1/2 Tbsp extra virgin olive oil
- 1/2 Tbsp honey
- 1 Tbsp water
Instructions
Pasta
- Finely chop the garlic. Remove seeds and finely dice the large mild chilli. Dice the anchovy fillets if using.
- Sauté garlic, chilli, and anchovy over a medium heat, being careful the garlic does not get any more than light brown.
- Fill a large pot with water and add the salt. Bring to the boil.
- Add the pasta and cook until al dente.
- Drain the pasta.
- Add the truffle oil, butter, pasta, and parsley to the garlic and oil and toss well to distribute the flavours.
- Prepare the plates and serve.

- Blend all ingredients.
- Add a little more water to bring to the right drizzly consistency.
- Drizzle around the pasta when serving.
